When did a new Strip restaurant last open with a breakfast menu? This fall, one did. Four new rooms have opened or will open between August and November, and three of them are open before 5 p.m. Laid end to end, their hours cover a full day, morning to late night, with each one taking a different part of it.
For anyone with a home in one of the Strip's towers, that means a new address for an ordinary weekday morning as well as a big night out. Here's when each one opens:
- 9:30 a.m.: Wynn's Cliff House Grill, above the 18th green of Wynn Golf Club
- 11 a.m.: Category 10 at Flamingo Las Vegas, opening Thursday, Oct. 15
- 3 p.m.: Vinyl Room, on the 63rd floor of Mandalay Bay
- 5 p.m.: The Corner Store, on the third floor of The Cosmopolitan, opening Nov. 9
9:30 a.m. Above the 18th Green
The earliest door belongs to a golf clubhouse. Wynn Las Vegas opened Cliff House on Friday, Oct. 2. It's a new two-level clubhouse for Wynn Golf Club, designed by Skidmore, Owings & Merrill with Wynn Design & Development. It has a new pro shop, locker rooms, a players' lounge and a tee on the roof. The restaurant inside, Wynn's Cliff House Grill, is led by Executive Chef Patricia Gamez. Wynn's announcement says it serves breakfast, lunch, afternoon bites and sunset cocktails to "golfers, resort guests, and locals alike."
The site has history for anyone who knows the north end. Before Wynn Las Vegas, the Desert Inn and its golf course anchored this stretch of the Strip, and midcentury homes once sat near the course. The clubhouse design draws on that legacy, using travertine, warm wood, and a continuous reclaimed-hardwood ceiling that runs from the inside out to the terrace. Gamez previously ran the kitchen at Jardin at Wynn Las Vegas. The morning menu includes Sticky Toffee Pancakes with crème fraîche and smoked sea salt, and a Beef Birria Breakfast Burrito.
The schedule follows the sun. The grill is open 9:30 a.m. to 5 p.m. Sunday through Thursday and 9:30 a.m. to 7 p.m. on Fridays and Saturdays. The full menu runs until 3 p.m., then small bites until close. Wynn's Master Mixologist Mariena Mercer Boarini leads the beverage program, and her list includes the 19th Hole, an Old Fashioned made with WhistlePig "Cliffhouse Signature Barrel" rye and chai-cardamom spices. Tee times go through Golf Concierge at 702-770-4653.
11 a.m. at Flamingo, Two Days From Now
Midday moves to the center of the Strip. Luke Combs' Category 10 Las Vegas opens at 11 a.m. on Thursday, Oct. 15, at Flamingo Las Vegas, 3555 S. Las Vegas Blvd. The Caesars Entertainment announcement says opening day starts with Dingo raffling five pairs of boots among the first 50 guests. Free line dancing and performances by TJ Favella, Desert Heat and DJ Eric Rhodes continue through Sunday.
The building is big: three stories, 34,000 square feet, 800 seats, seven bars inside, two stages, and a 3,000-square-foot covered rooftop facing the Strip. That size matters for how residents might use it. Hurricane Hall, the ground-floor dining room, is built for daily live music and free line-dancing lessons. The Still, on the second floor, is quieter: a bourbon room stocked with bottles Combs picked himself, with an outdoor patio over the city. On the boulevard side, the Hurricane Bar serves frozen and signature cocktails at a walk-up counter, to drink inside or carry onto The LINQ Promenade. The menu draws on Combs' Appalachian upbringing, with Carolina Smoked Ribs and a Smoky Mountain Chicken Sandwich.
A short walk away at the Forum Shops at Caesars, a smaller midday addition has been open since Sept. 10. Sanrio's Hello Kitty Cafe takes up 3,400 square feet, has an in-house pastry chef, and serves a $95 afternoon tea by reservation, according to Eater Vegas.
3 p.m., Sixty-Three Floors Up
The late afternoon slot is the most surprising one, because of what the room used to be. In August, Live Nation and MGM Resorts turned the former Foundation Room on Mandalay Bay's 63rd floor into Vinyl Room. Eater Vegas describes the 15,000-square-foot space as a tribute to analog music, modeled on Japanese listening bars. The dim, wood-lined room holds more than 4,700 albums and a high-fidelity system built on Mastersounds Clarity-M speakers. Eater reports that the music is curated as background for the room, which sets it apart from clubstaurants where the DJ is the main event.
Vinyl Room opens daily at 3 p.m. and stays open late. Sean Kenyon, formerly of Williams & Graham in Denver, runs the cocktails. Chef Ryan Derieux, formerly executive chef of Voltaggio Brothers Steakhouse in Washington, D.C., runs the food. The menu goes past bar snacks into full plates, like miso black cod, Australian wagyu strip steak and a fish katsu sando. It also has king crab dumplings at $125 a serving. The public can book through OpenTable. A membership, starting at $2,500, adds a private room, curated events, and access to shows in Las Vegas.
A 3 p.m. opening on the 63rd floor means the view from the top of Mandalay Bay is there in daylight and through dusk.
5 p.m. Is the Hard Table
The other rooms this season are about access. The Corner Store is the one where getting in takes planning. The Las Vegas Review-Journal describes the New York original as known for celebrity guests, "uber-tough-to-score tables" and five-cheese pizza rolls. Its Las Vegas location opens Nov. 9 at The Cosmopolitan and is already taking reservations. It's the restaurant's first expansion, from Eugene Remm, Tilman Fertitta and Catch Hospitality Group, the same team that opened Catch at Aria in 2018. Michael Vignola, executive chef of the New York restaurant, is working with Daniel Bernardo, executive chef in Las Vegas.
The menu puts the pizza rolls, served with whipped ranch, next to a wagyu French dip made with Westholme Australian ribeye roasted for 72 hours. There are also Las Vegas-only cuts: a wagyu tomahawk and a wagyu porterhouse from Rosewood Beef of Texas. Martinis anchor the drinks list. Some are sized for two or three people, and a Las Vegas-only version of Oli's Dirty Martini comes with mascarpone caviar olives.
Rockwell Group, which designed the SoHo original, also designed the new room, in the former Blue Ribbon American Grill & Oyster Bar space on the third floor. It includes a Martini Room with a green onyx bar and a private dining room for up to 24 that can be split into smaller spaces. Hours are 5 to 10 p.m. Sunday through Thursday and 5 p.m. to late on Fridays and Saturdays. Reservations go through The Cosmopolitan's site or 702-675-9828.
So the timing works out like this. The morning, midday and afternoon rooms are already open or open this week. The one dinner room with a reservation problem doesn't open for almost four weeks, and its booking calendar is open now.
The Season Running Alongside the Day
The new rooms set the hours. The season's recurring events set the dates. Here are the confirmed 2026 dates on the Strip through the holidays:
| What | Where | 2026 dates |
|---|---|---|
| "Casting Tranquility...Autumn Artistry" fall display | Bellagio Conservatory | Sept. 19 to Nov. 7 |
| Holiday display | Bellagio Conservatory | Nov. 14, 2026 to Jan. 2, 2027 |
| Oasis Ice Rink | Fontainebleau Las Vegas | Opens Nov. 19 |
| "Saddle Up For Spectacular" NFR programming | Fontainebleau Las Vegas | Dec. 3 to 12 |
According to the LVCVA's October news briefs, the fall display was created by Ed Libby with Bellagio's Horticulture team. Bellagio's conservatory page lists the fall display closing Nov. 7 and the holiday display opening Nov. 14. That leaves a week in between for the changeover, and it falls right around The Corner Store's Nov. 9 opening.
The Oasis Ice Rink closing date isn't settled yet. Fontainebleau's rink page lists the season as Nov. 19 to Jan. 4. The LVCVA's Oct. 2 release says the rink runs through Jan. 17, 2027. Until the two match, plan a January visit around the earlier date. We couldn't find confirmed 2026 dates for The Cosmopolitan's rink or Wynn's holiday display as of mid-October, so they're not in the table.
Living on the Strip, the building you choose decides which of these rooms is a short walk from your door and which one means a ride down the boulevard.
